Minestra Di Fagioli E Orzo Bean soup with orzo
1 cup dried beans ½ cup Pasta pellets (orzo) ½ onion, chopped 1 head of garlic, crushed 2 stalks of celery, sliced 2 potatoes, diced 4 carrots, diced 2 bay leaves 1 ham bone Salt
Soak the beans in water overnight. Drain and place in cold water with the pasta pellets. Add the onion, garlic, celery, potato, carrot, bay leaves and ham bone, and bring to a boil. Reduce the heat and simmer for 1½ hours. Season with salt, and continue simmering for another ½ hour. Remove the ham bone and bay leaves, and serve with slices of toasted whole grain bread. In Friuli, the soup is left to stand for a short while before serving, until it has thickened to the point where it could be cut with a knife.
