Strawberry Smoothie (Makes 2 cups)
For a thick smoothie that can be eaten with a spoon, use the minimum amount of soymilk (or other nondairy milk) necessary for blending. Stop the blender frequently to push unblended fruit down onto blade.
1 cup frozen banana chunks 1 cup frozen strawberries 2 tablespoons apple juice concentrate ½ teaspoon vanilla (optional) 1-1½ cups soy or other nondairy milk

Strawberries are loaded with Vitamin C and other antioxidants and photochemicals essential in cancer prevention and survival.
