Spring Recipe

Pasta Primavera
(Spring Pasta)

Spring brings with it the welcome fragrance of blooming cherry blossoms and trees of all types.
Spring also revitalizes the soul after the long winter. Enjoying the spring sunshine and engaging in outdoor activities reminds all of us of our health and figures. Pasta primavera is a great addition to ones lifestyle for health and fitness.
 
Ingredients: buy organic whenever possible,
1-Head of broccoli
1-Zucchini
1-Bunch of carrots
1-Green pepper
1-Head of garlic
4oz of Extra Virgin olive oil
1- Table spoon of sea salt
1lb of spaghetti

Preparation:
·Wash all your vegetables thoroughly
·Cut all vegetables up. For the broccoli, cut into small flowerrettes. Cut carrots into 1/8 slices. Do the same for peppers and zucchini.
·Crush each garlic clove, do so by using the flat side of a chef’s knife.
·Heat the olive oil in a 5qt. pan until a light smoke appears. Toss in the whole crushed garlic head. Add the sea salt and cook until lightly golden. Remove the garlic and put aside. Immediately toss in the peppers first. Sauté the pepper until slightly wilted. Toss in the carrots and zucchini; and sauté, stirring, for  about  5min.Toss in the broccoli and continue for another 5 minutes.
·Bring water to a boil. Add teaspoon of sea salt to the water. Toss in the pasta and cook until Al Dente. Approximately 10min.
·Before straining the pasta, remove 2 ladles of the boiling pasta water and add to the vegetables. Strain pasta and toss with vegetables. Stir. Allow the mixture to sit with a cover for about 3 – 5min. Then serve.

Serves six people. Bring it for lunch the next day. Oh, by the way. Try the sautéed garlic. Bacteria can’t hide from it. It’s great! Not a good idea for first dates.
