I advise my friends, clients and groups to always cook with stainless steal pots. Never cook with coated pots or pans. Never, never cook or bake with aluminum.

Non-stick surfaces chip and wear. The materials used in those non-stick pots and pans can make you ill.
Cooking in aluminum pots and pans is also hazardous to your health. At high temperature the aluminum throws off toxic chemicals, which jump into your foods.

Always stir with wooden spoons on any cooking surface. Metal on metal scratches and microscopic particles will get into your foods and sauces.

Store your foods only in glass containers. Don’t keep refrigerated foods for more than two days. The food looses all of its vitamins and minerals and begins to breakdown, allowing buildup of bacteria.

Don’t wrap your foods in plastic wraps. Most plastic wraps and plastic containers use chemicals that are derived from the petroleum industry. They are toxic chemicals.

Avoid microwave cooking or eliminate it completely. Most people simply reheat foods or thaw frozen foods with them. We say don’t even do that. The 30-60 seconds it takes to reheat food in a microwave is about the same it will take in a pot on a stove. You may have two more items to clean, but your food will certainly taste better and its molecules and nutrients will stay intact. Once you do this a couple of times you will see how right I am.

Eating the right foods requires handling those same foods properly.

The outer layer of most vegetables such as carrots, zucchini, collard greens, Swiss chard, etc., is loaded with minerals. Unless they are damaged, aged or molding, which means that vegetables are too old to eat; do not discard this outer layer. Do not eat any food which has mold. Wash all vegetables thoroughly. Wash vegetables like carrots with the coarse side of a sponge.
Food is life. We have never in the history of the world had access to the variety of whole foods available today. Yet in the U.S. nutrition is a serious problem. We may be the largest society that is overfed and undernourished in the history of this wonderful world.

Dr. Mehmet Oz, author of the “Owner’s Manual” recently stated in a Readers Digest, August 2005 interview, that food might be the new frontier in medicine. That statement from a leading heart surgeon says much about how ineffective our pharmaceutical drug industry is and how irresponsible we have been to our children’s health. People, we must take control of our lives. Eating the right food is the beginning.

We strongly recommend buying organic whenever possible. Organic farmers rotate their crops thereby maintaining nutrient rich soil. Add the fact that no pesticides or herbicides are allowed and you got a homerun on your hands. Corporate farming does the complete opposite.

These recipes are as wholesome as you can possibly get. We don’t recommend you stop any diet you may be on that is prescribed by your physician. However, these foods are excellent in attempting to lose weight and undergo a lifestyle change. We must start somewhere. I strongly urge you to start here.
