Plant profile: The nutmeg tree grows in Indonesia and Sri Lanka. The fruits are covered in a layer called mace, which is removed before processing. The highly aromatic nutmegs are steam distilled to give a fragrant essential oil. In Western herbal tradition, nutmegs were prized for their digestive tonic and muscle-warming properties. In medieval times, they were so valuable they were kept locked away.
